Giraffe Herzliya was our second restaurant and our first attempt to speak in noodles outside of Tel Aviv. This is also where we started to develop our concept of non-identical twins – restaurants that adjust to the area and the local clientele while offering the same brand. The result? Similar but not identical eateries. The Herzliya restaurant became the Giraffe Café, as we understood that Herzliya needed a more laid-back, sophisticated atmosphere than the rough-and-tumble of Ibn Gvirol.
